Creamy Cucumber Soup!

During the Winter months  it’s nice to have some soup ideas handy.  All the soup recipes on RawPeople.com are Raw.  What does that really mean?  It we are preserving the enzymes and good nutrients by not heating the soup over  110 degrees.  You’ll reap many more benefits from your foods by eating them at room temp or slightly heated.

Creamy Cucumber Soup!

1 cucumber, peeled and cubed
1 medium ripe avocado
1/2 lemon, juiced (or just squeeze, but be careful to omit the seeds)
1/2 cup Life Ionized Water
2 tablespoons of fresh Dill / can use dry but use less
sea salt to taste

Blend all ingredients and slightly heat if you want or enjoy at room temperature

Top with any or all of the following:  sprouted sunflower seeds, diced celery, diced red bell pepper, diced tomatoes

Guacamole Spread

Ingredients:
1 ripe avacado
1 tomatoe
1 tspn. lemon juice (or other acid)*
Salt/pepper/garlic powder to taste
1 TB dried minced onions (sprinkle on top)

* You must include some kind of acidic liquid or your spread will turn a very unappetizing brown.

Mash up all ingredients.  Serve over crackers.

This, of course, is not totally “raw”, as those ryvita crackers are purchased at the store, but if you’re in a pinch and have none of your
own home made crackers, these are better than bread.

Soak your nuts

Soaking is very important.   In nature, nuts and seeds are protected with an enzyme inhibitor. During the spring rains, this inhibitor is washed away and the nut or seed starts to germinate and sprout.   When we eat nuts and seeds with the enzyme inhibitor still intact, we are just giving the body more work to do.   In addition, when the sprouting process starts, the nut or seed starts to predigest itself.   The carbohydrates are turned into simple sugars, proteins into amino acids, and fats into fatty acids.

There is more!   The nutrition can increase up to 300%.  Basically all you have to do is cover your nuts or seeds with filtered water (twice as much water), and let sit over night.   Nuts take a little longer, 12 hours is good.  Now rinse them very good, put into a colander and cover with a towel, and put in a dark place where they can breathe.   Good use for the microwave!   If you have not unplugged your microwave yet, now is a good time to do it.   If your microwave is plugged in, how is anything put into it going to come out alive?

Now they can begin sprouting. Be sure to leave the door open so they can get lots of air. You can also leave them on the kitchen counter with a towel over them. Let them sit for 12 hours, rinse, and use. You can store sprouted nuts and seeds in the refrigerator for a week.

Burrito

Raw Burrito

Ingredients

2 ripe avocados
3 tomatoes
½ hot pepper
2 TBS chopped yellow onion
¼ cup fresh cilantro, chopped
1 ear fresh corn
2 tsp fresh lime juice
6-8 lettuce leaves (or bok choy leaves)

Methods/steps
Mash avocado, mix in remaining ingredients and place into lettuce and wrap edges to form “burrito.”

Lush Lime Quinoa
7 min prep / 15 min cooking / serves 3-5

Ingredients:

1 ½ cups filtered water
1 cup quinoa
2 Tbl olive oil
½ cup lime juice, fresh squeezed
1 medium lime zest
2 small scallions, chopped
1 medium cucumber, peeled and diced in cubes
1 medium bell peppers (try using ½ green, ½ red), finely chopped
½ cup brazil nuts (or almonds), chopped
½ tsp sea salt or to taste
cilantro for garnish

Loving Preparation:

1. Boil water add quinoa reduce heat to low; cook for 15 minutes with a lid or until water is fully absorbed.

2. Place in a large bowl with remaining ingredients and gently mix well.

Crackers – Raw Red Pepper Walnut

Raw Red Pepper Walnut ‘Oh My Omega’ Crackers

This is a really good and easy recipe. The golden flax seeds and walnuts give it almost a buttery taste and it’s so rich in omega essential fatty acids – much more tasty than a fish oil capsule!


Ingredients:

  • 2 medium sweet red bell peppers
  • 1.25 cups walnuts (soaked 1-2 hours in water)
  • 1/4 cup golden flax seeds (do not soak before grinding)
  • 1/4 cup hemp seeds
  • 1 t sea salt

1) Remove seed and stem from bell peppers and pulse into small pieces in a food processor.
2) Pulse walnuts into small pieces in food processor.
3) Grind golden flax seeds into powder in a coffee bean grinder.
4) Combine all ingredients. Add water if too dry to hold together. Taste and adjust salt.
5) Spread thinly on teflex sheet. (I put another teflex sheet on top and rolled out with a glass.)
6) Remove top teflex sheet if you used it to roll out dough. Dehydrate at 105F.

7) When dry enough to hold together, put a screen over top and flip crackers.

8) Place screen back in dehydrator until crackers reach desired crispness.

Great as a side with salads. You can also double this recipe and spread on two teflex sheets. More to share and enjoy without guilt!

Lilla uses an Excalibur dehydrator. But if you don’t have one, you can try setting your oven to the lowest possible temperature and propping the door open (although this is obviously a waste of energy.) She also advises to invest in a good oven thermometer so you can monitor the temperature.

 

Chocolate Mylk

This recipe is from Kali Lilla

Recipe: (This is supposed to remind you of chocolate milk)

3 romaine hearts
3 carrots
3 cups of spinach which made about 2 cups of juice.

TIP: If you try it, juice the carrots first and then put the pulp aside. Then you can run the carrot pulp through a twin gear juicer again adding nut and raisins and you have the beginnings of raw carrot cake. Then spice it up with cinnamon and nutmeg – SO GOOD!

Now, as you progress, Flylady will send you e-mail to help you develop routines to get you going in the morning and to send you off to sleep in the evening. She’s tough here – routines are very important! It takes 21 days to form a habit, but for SHEs, it takes 28 days. FlyLady is going to insist you shine your sink too – you’ll soon find out why!
