Creamy Cucumber Soup!

During the Winter months  it’s nice to have some soup ideas handy.  All the soup recipes on RawPeople.com are Raw.  What does that really mean?  It we are preserving the enzymes and good nutrients by not heating the soup over  110 degrees.  You’ll reap many more benefits from your foods by eating them at room temp or slightly heated.

Creamy Cucumber Soup!

1 cucumber, peeled and cubed
1 medium ripe avocado
1/2 lemon, juiced (or just squeeze, but be careful to omit the seeds)
1/2 cup Life Ionized Water
2 tablespoons of fresh Dill / can use dry but use less
sea salt to taste

Blend all ingredients and slightly heat if you want or enjoy at room temperature

Top with any or all of the following:  sprouted sunflower seeds, diced celery, diced red bell pepper, diced tomatoes

Burrito

Ingredients

2 ripe avocados
3 tomatoes
½ hot pepper
2 TBS chopped yellow onion
¼ cup fresh cilantro, chopped
1 ear fresh corn
2 tsp fresh lime juice
6-8 lettuce leaves (or bok choy leaves)

Methods/steps
Mash avocado, mix in remaining ingredients and place into lettuce and wrap edges to form “burrito.”

Lush Lime Quinoa
7 min prep / 15 min cooking / serves 3-5

Ingredients:

1 ½ cups filtered water
1 cup quinoa
2 Tbl olive oil
½ cup lime juice, fresh squeezed
1 medium lime zest
2 small scallions, chopped
1 medium cucumber, peeled and diced in cubes
1 medium bell peppers (try using ½ green, ½ red), finely chopped
½ cup brazil nuts (or almonds), chopped
½ tsp sea salt or to taste
cilantro for garnish

Loving Preparation:

1. Boil water add quinoa reduce heat to low; cook for 15 minutes with a lid or until water is fully absorbed.

2. Place in a large bowl with remaining ingredients and gently mix well.

Chickpea/Zucchini Pancakes ~ Chickpea Crackers

zucchinipancakes1Delicious pancakes and crackers made without white or wheat flour.  You’ll need to either purchase or make your own chickpea flour.  It’s as easy as getting out your grinder/blender/food processor and grinding them.  Cheaper too!
