Vege Chips the “Pringle Alternative”

Equipment needed:

High power blender such as a Vitamix or
Blendtec

Dehydrator:
such as an Excalibur

Ingredients:

• 1 cup flaxseed (ground) soak overnight
• 1 Bell pepper rough chopped
• 2 large tomatoes rough chopped
• 1 clove garlic
• 1/4 to 1/2 of small onion
• 1 Tbsp or more oregano (fresh or dried … I used dried)
• Water enough to make it thin (2-3 cups or more, added 1 cup at a time) Batter should be runny but not drippy.

Mix all ingredients in vita-mixer.  Start slow and bring it up slowly.  Blend for 30 seconds or so.  Stir in a few flax seeds just for decoration.   Drop by tablespoonfuls on sheet (4 across).  They will look high but they thin out as they dehydrate.  Temperature 105.

After you turn them the first time, sprinkle sesame seeds (or whatever else you’d like) on them.  YUM !

didyouknow2Ideas/comments and suggestions: These chips turned out wonderful the very first time
I made them.  They take anywhere from 12-16 hours to fully dry.  Do not turn them too soon.
I will update this post the next time I make them which will be soon and tell you how long on each side.  They are scrumptious and my husband said “get them away from me or I’ll eat them all”.  The batch made a lot of chips.  Next time I’ll tell you how many, but easily enough to feed a crowd or us for a few weeks.  You could, of course change up the spices to suit your taste.

Equipment needed:

High power blender such as a Vitamix
Mandoline slicer

Ingredients:

  • 1 Large Zucchini
  • 1 stalk celery (rough chopped)
  • 1 red pepper remove seeds (orange or yellow) save a little of the pepper (about 1/4 of it)
  • 3 Tbspn. Add nutritional seeds
  • ¾ cup sunflower seeds (soak overnight)
  • ¼ cup cashews
  • ½ tsp white pepper (not black …. see note below)
  • 1 Tbspn chickpea miso or seasalt
  • 1/16 cayenne powder
  • 1 clove garlic
  • 1 pitted date
  • 2 tspns of tarragonTo prepare the zucchini … cut off both ends and slice lengthwise.  Use ½ of the zucchini and, using your mandolin (or a potato peeler) slice it into ribbons lengthwisePut above ingredients into Vita-Mix (or your powerful blender of choice) and blend all til creamy

didyouknow2Ideas and suggestions: Take a lettuce leaf or collard leaf .. garnish with red pepper, scallion, and the zucchini noodles.  This pate is a good alternate of choice to other pates because of its high vegetable content allowing you to be able to eat more of it.

*
Green peppers are not ripe and they are hard to digest.  Use red/yellow/or orange.

* Black pepper made from peppercorns that are green, not Ripe, they dry them and that’s how they turn black.  These “un-ripened” seeds are very hard on the digestive system.  But red & white pepper is made from ripe peppers.

* GARLIC BREATH! Removing the little green part in the center of the garlic will eliminate garlic breath.  WHY?  Well, our bodies can not properly digest it, and it therefore creates garlic breath.  Simply cut the clove in half and remove the green little seed looking part.  It only takes a second.  By the way I have noticed that not all cloves have this green little part, so don’t go crazy looking for it.

Guacamole Spread

Ingredients:
1 ripe avacado
1 tomatoe
1 tspn. lemon juice (or other acid)*
Salt/pepper/garlic powder to taste
1 TB dried minced onions (sprinkle on top)

* You must include some kind of acidic liquid or your spread will turn a very unappetizing brown.

Mash up all ingredients.  Serve over crackers.

This, of course, is not totally “raw”, as those ryvita crackers are purchased at the store, but if you’re in a pinch and have none of your
own home made crackers, these are better than bread.

Crackers – Raw Red Pepper Walnut

Raw Red Pepper Walnut ‘Oh My Omega’ Crackers

This is a really good and easy recipe. The golden flax seeds and walnuts give it almost a buttery taste and it’s so rich in omega essential fatty acids – much more tasty than a fish oil capsule!


Ingredients:

  • 2 medium sweet red bell peppers
  • 1.25 cups walnuts (soaked 1-2 hours in water)
  • 1/4 cup golden flax seeds (do not soak before grinding)
  • 1/4 cup hemp seeds
  • 1 t sea salt

1) Remove seed and stem from bell peppers and pulse into small pieces in a food processor.
2) Pulse walnuts into small pieces in food processor.
3) Grind golden flax seeds into powder in a coffee bean grinder.
4) Combine all ingredients. Add water if too dry to hold together. Taste and adjust salt.
5) Spread thinly on teflex sheet. (I put another teflex sheet on top and rolled out with a glass.)
6) Remove top teflex sheet if you used it to roll out dough. Dehydrate at 105F.

7) When dry enough to hold together, put a screen over top and flip crackers.

8) Place screen back in dehydrator until crackers reach desired crispness.

Great as a side with salads. You can also double this recipe and spread on two teflex sheets. More to share and enjoy without guilt!

Lilla uses an Excalibur dehydrator. But if you don’t have one, you can try setting your oven to the lowest possible temperature and propping the door open (although this is obviously a waste of energy.) She also advises to invest in a good oven thermometer so you can monitor the temperature.

Almond Dream Bar Recipe

8 oz almond butter
7-8 oz coconut oil
1/3 cup lucuma powder

liquify in the Food Processor

Add:
1/3 cup sprouted/Dehydrated Buckwheat (this gives it crunch)
1/3 cup goji berries (or raisins)

Pulse in Food Processor

Throw in Yum Pot (this is Angela’s name for the silicone molds which you can purchase here)
