For now my blog is mostly diet and food related (diet/recipes/exercise) , but my future plans are to add all things Domestically related.  Hence the title “Domestically Literate”.  So … hope you find lots of things that interest you “domestically” here.  We’ve only just begun.  Enjoy!

When I began this blog back in April of 2009 I was 169 pounds.  I was very afraid that I would see 170 pounds and knew I had to do something SOON.   So, I began adding loads of fruits/veges/whole grains/nut/seeds and “live” foods into my diet.   As I eliminated lots of junk, I did see the pounds begin to leave (albeit slow).

As most raw foodies and or vegans know, it is a challenge (at least at the beginning) to find substitutes for all the junk we’ve been eating for all these years.  Sooooooooo . . . I’m collecting the best of what I’ve found here.  As I progress, I’ll also add my own.  But for now, I will give credit where credit is due and let you know where I’ve found all these goodies.

Vegan Chocolate Cake

*  Preparation Time: Quick
*  Serves:6 – double the recipe to serve more
*  Equipment needed: Hands, paring knife, food processor, measuring cups/spoons,spatula


FIRST THINGS: Soak your nuts 4 hours ahead of time, rinse 2-3 times.  There is no need to let them dry.  I just rinse them well and throw them immediately into the processor.  Do not overgrind, or your cake will be too oily.  Pulse first and then whirl for about 12-15 sec.

Ingredients:
1/3 cup walnuts
10 majool dates (pitted)
1/3 cup cocoa powder (I use Dr. Fuhrmans)
1/4 cup Agave (dark)
1/2 tspn. vanilla (not extract – use organic, or Madagascar from Williams Sonoma)
1/8 tspn. salt

Grind the walnuts, then add the dates and pulse a few times.  Add the remainder of the ingredients and blend until crumbly.

Turn out the mixture onto a pretty plate and form a cake.  Press it down well til it forms a solid mass.

Dress it with your choice of fruit, shredded coconut, chocolate sauce or whatever you like.

Chocolate Sauce: (double the recipe for a larger cake)
1/3 cup Cocoa Powder (Fuhrmans)
1/4 cup Agave
1/2 tspn vanilla (not extract) use organic or Madegascar from Williams Sonoma

I’m not kidding you or exaggerating at all when I tell you that this cake tastes like the most decadent brownie or piece of fudge you’ve ever had.  And…it’s sooooooooooooooo easy.
